The Bok Choy Smoothie
Breakfast this morning:
In a blender, I combined raspberries, blueberries, apple juice, banana, vanilla yogurt, and suprise…. bok choy. Smoothies are such a great way to drink your greens, so if you end up with extra kale, collard, or other greens — put them in a smoothie for a nutrient boost. Try it and you’ll swear you can’t taste the difference. And it’s a great snack my 3 year old loves. “It’s real food,” as my husband says. Not processed crap.
The other evening, after a long day of work, when I would usually come home and scarf down something that wasn’t all together nourishing, I started making a change. I actually made a salad. Fresh red leaf lettuce, carrots, almonds, sunflower seeds, nutritional yeast, olive oil and balsamic. It felt so good.
